If there’s one upside to cold weather, it’s the warm comfort food we’re allowed to indulge in guilt-free. If you’re looking for a new recipe to add to your weekly rotation, below are a few easy (and tasty!) ones that have been bit hits in our households lately.
Think of this one as a twist on chicken soup. While it requires a few extra ingredients that typically wouldn’t be on your regular grocery list (like fresh sage and buttermilk), it’s definitely worth divulging from your regular grocery routine. To make this recipe even easier, skip making the bone-in chicken breasts your self and pick up a roasted chicken. When storing leftovers, remove the dumplings with a slotted spoon and put them, along with the broth, in the fridge (in separate containers). This prevents them from getting soggy!
This is another Halfbaked Harvest recipe—but it’s so unbelievably good. If you like Thai food, and ramen, then you have to try this. You can make it in an Instant Pot or in one pot on the stove. Either way, it’s going to take you about 30 minutes. Finding ramen noodles in your grocery store can be a little tricky, depending on where you live. If you can’t find them, try Amazon. That site has everything!
I like adding taco spices to this soup and calling it Taco Soup. It’s a great, healthy soup to keep in your fridge to heat up for weekend lunches, add as a side to a simple dinner or throw in a Thermos on the way to work. I recommend using Asian cabbage (rather than the regular green stuff) because it tastes so much better. Bonus: it can also be make in the Instant Pot or slow cooker!
